Teil 1: 250 g Mehl mit 300 ml Wasser und 50g Sauerteig verrühren. Mindestens 6 Stunden bei Zimmer-temperatur gehen lassen. | Part 1: Mix 250 g of flour with 300 ml of water and 50 g sourdough. Set aside for at least 6 hours at room temperature. |

Teil 2: Jetzt werden 250 ml Wasser,125 g helles Weizen- oder Dinkelmehl und 125 g Roggenmehl unter den Teig gerührt. Behmt an dieser Stelle bitte 50 g Sauerteig ab und füllt es in ei Glas. Ab in den Kühlschrank damit! Das ist dann euer Sauerteig für das nächste Brot! Teil 3: Füge dem Teig jetzt noch 2 TL Salz und 150g helles Dinkel- oder Weizenmehl hinzu. Jetzt kommt der Teig in eine gefettete oder mit Backpapier ausgelegte Backform. Jetzt einige Stunden in der Backform gehen lassen, bis er die Backform ausfüllt. | Part 2: Mix 250 ml water, 125( wheat) flour or spelt flour, and 125 g rye flour to your starter dough. Now take 50 g sourdough and put it into a glass jar that will be stored in the fridge. You can use for future breads! Part 3: Finally you add 2 teaspoons of Salt and 150 g (wheat) or spelt flour. Put the bread into a baking tin. You need grease the baking tin beforehand or you use baking paper (this is what I do). Set aside for a couple of hours until the dough rises to fill the up the tin. |
Teil 4: Den Ofen auf 200°C vorheizen und für ca. 45 Minuten backen. Eine Schale Wasser sorgt für ein angenehm feuchtes Backklima! Rundes Brot Alternativ könnt ihr das Brot für eine runde Form auch in einem Eisentopf backen. Ein tolles Brot bekommt ihr wenn ihr das "Topfbrot" wie folgt 45 minuten lang backt: Erst 15 min. bei 250 °C und mit Deckel, dann 15 min. bei 180 °C (mit Decke)l und zum Schluß 15 min. bei 180°C ohne (!) Deckel! PS: Der Sauerteig hält sich im Kühlschrank ca. 2 Wochen. Dannach müßt ihr ihn hin und wieder mit einem Löffel Roggenmehl füttern damit er euch nicht verhunger! Ich werde demnächst an dieser Stelle posten wie ihr Sauerteig selbermachen könnt! Noc ein bißchen Geduld ... | Part 4: Preheat the oven to 200°C and back for around 45 minutes. It's recommended to put a oven-prove dish with water into the oven while baking. It provides moisture for the baking process. Round-shaped bread Alternatively you can bake the bread in an iron pot. Than I recommend to bake it for 45 minutes like this: First at 250°C with a lid for 15 min, then another 15 min. at 180 °C (with lid). Finally without (!) lid at 180 °C for the last 15 min. PS: The sourdough will last in the fridge for about 2 weeks. After that you have to feed it rye flour every once in a whil so it doesn't starve.
